Savory Crab Bread Pudding Soufflés

Garlic cheddar biscuits and delicious crab unite for the ultimate flavor union, sure to delight your guests.

Lump crab, shell pieces removed

Roasted red peppers, finely diced

1/3 cup
Cheddar cheese, shredded
4 oz
1 cup
Chives, fresh, thinly sliced
1/4 cup
  1. Cut baked biscuits into quarters.
  2. Whisk together cream, eggs, Old Bay seasoning, mustard and Worcestershire sauce in large bowl until well-combined.
  3. Stir in biscuit pieces and allow to soak for 1 hour, stirring occasionally.
  4. Mix in crab, red peppers, cheese and chives; deposit 6 oz into greased and floured 6 oz soufflé cups or ramekins.
  5. Place dishes into deep roasting pan; carefully add hot water to pan, about one-third the way up the outside of ramekins.
  6. Cover with foil and bake as directed below, removing foil after 35 minutes of baking.
  7. Bake until soufflés are springy, knife inserted into center comes out clean and internal temperature reaches 190°F.
  8. Allow to cool at least 15 minutes then gently remove soufflés from ramekins; serve warm or cool and refrigerate or freeze.

*Rotate pan baked in convection oven one-half turn (180°) after 22 minutes of baking then remove foil after an additional 13 minutes of baking.

  • Garnish with additional lump crab, chives, and red pepper sauce with a side salad if desired. Note nutrition information will change. For a brunch version, top crab bread pudding with a poached egg and red pepper hollandaise.
