Rustic Rhubarb Tarts

Our Southern Style biscuit coated with hemp hearts and oats lends a rustic look and subtle toasted notes to this pastry. The tart flavor of the rhubarb and the delicate hint of cardamom rounds out the richness of the biscuit.

Rhubarb, frozen and thawed, 1/4-inch pieces

Prep
  1. Thaw biscuit dough, covered at room temperature 15-30 minutes until flexible or overnight under refrigeration.
Assembly
  1. Stir hemp hearts and oats together in a small bowl
  2. Slightly moisten thawed biscuits and press approx. 1 Tbsp of hemp heart mixture into top and 1 Tbsp into the bottom of each biscuit.
  3. Create tart shell by pressing the interior of each biscuit flat to create a 3½ inch diameter well with a ¼-inch wide rim for the side crust.
  4. Place shells on a parchment-lined full sheet pan.
  5. Press ½ cup of rhubarb pieces, cut side up, in each biscuit well; sprinkle 1 Tbsp coarse sugar over top.
  6. Bake as directed below until center dough is baked through and the edges are golden brown; cool slightly before finishing.

*Rotate pans baked in convection oven one-half turn (180°) after 5 minutes of baking.
Finishing
  1. Heat icing just until melted then stir in cardamom.
  2. Lightly drizzle approx. 1/2 Tbsp icing mixture over each tart then serve.
