Rhubarb Bread with Hemp Hearts

The addition of hemp hearts to this rhubarb bread adds a fleck of green and a subtle nut flavor which blends nicely with the distinctive taste of rhubarb.

Batter
  1. Stir water, orange zest and food coloring (if desired) in mixing bowl with whisk until well blended.
  2. Add muffin mix and stir until batter is smooth; fold in rhubarb and hemp hearts.
  3. Deposit 1 lb 8 oz batter into each of 6 greased (9 x 4 1/2 x 2 1/2) loaf pans.
Assembly
  1. Sprinkle 1/4 cup of thawed rhubarb pieces evenly across each loaf; lightly press down into batter.
  2. Sprinkle 1tsp coarse sugar over top.
  3. Bake as directed until wooden pick inserted in center of each loaf comes out clean; allow to cool for 30 minutes in pan then remove and cool completely on wire rack.
