Puff Toast Skagen

Create a classic Scandinavian appetizer that layers a creamy shrimp filling over puff pastry.

Red onion, finely diced

1 cup
Garlic, fresh, minced
1 tsp
Shrimp, peeled, deveined, cooked
2 lb
1 bag
Kosher salt
1 tsp
Black pepper
1/2 tsp
Puff Pastry
  1. Dock each puff pastry sheet, and cut puff pastry into 24 squares per sheet.
  2. Place on 2 parchment-lined full sheet pans, and bake as directed below.
  3. Set aside to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 6 minutes of baking.
Filling
  1. Whisk cream cheese in mixing bowl until softened. Add mayonnaise, and mix until well blended.
  2. Add lemon juice, lemon zest, dill, red onion and garlic and stir until well blended.
  3. Roughly chop shrimp into smaller pieces; add to the cream cheese mixture.
  4. Add salt and pepper; stir until blended.
  5. Store covered under refrigeration until use.
Assembly
  1. Cut a 2-inch hole into each puff pastry.
  2. Place approx. 2 Tbsp (1.5 oz) Filling mixture into each puff pastry.
  3. Garnish with sprig of dill and lemon wedge if desired and serve cold.
