Potato Leek Scones

Potatoes, herbs, leeks and cheese mixed with buttermilk biscuit mix turns out a lovely savory scone.

  1. Add water to mixing bowl. Add remaining scone ingredients to mixing bowl, and mix using rubber spatula approx. 30 strokes or until soft dough forms. Do not overmix.
  2. Divide dough in half, approx. 5 lb 8 oz each. Lightly flour work surface.
  3. Roll dough out into 12x16-inch rectangle, 1/2-inch thick (use biscuit rails to assist in rolling out, adding flour as necessary to prevent sticking).
  4. Cut dough vertically into 4 equal strips. Cut dough horizontally into 4 equal strips to create 3x4-inch squares.
  5. Cut squares diagonally to create 2.75 oz triangles. Place triangles on lightly greased or parchment-lined sheet pan in 4x4 pattern.
  6. Sprinkle each scone top with 1-2 tsp Parmesan cheese.
