Poached Egg and Spinach Breakfast Bowls

Eggs, Canadian bacon, spinach and tomatoes are topped with a to-die-for yogurt sauce in an awesome baked biscuit bowl.

Poached eggs, prepared

Biscuit Bowls
  1. Thaw biscuit pucks, covered, for 20 minutes at room temperature or overnight in refrigerator.
  2. Spray backs of 10 1-pint bowls generously with pan spray.
  3. Roll thawed biscuit pucks into 6 to 7-inch rounds, using flour to prevent sticking.
  4. Place rolled-out biscuit dough onto inverted bowls.
  5. Spray insides of 10 additional 1-pint bowls. Place greased bowls on tops of biscuit-covered bowls (biscuit puck should be pressed between two bowls).
  6. Bake as directed below and allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 6 minutes of baking.
Filling
  1. Mix yogurt, mayonnaise and Dijon mustard in small mixing bowl until smooth. Set aside.
  2. Fill cooled biscuit bowls with approx. 2 oz spinach and tomatoes.
  3. Top with 2 slices Canadian Bacon and a poached egg.
  4. Drizzle each bowl with approx. 0.5 oz yogurt dressing and serve.
