Pickled Chilies

Thai chilies, preserved with rice wine vinegar and sugar, can be eaten plain, served as a garnish, or added to baked goods.

Thai chilies, 1/4-in thick slices

Prep
  1. Wash all produce and cut as directed (use gloves to avoid chili burns).
  2. Place vinegar, sugar, water and salt into a small saucepan.
  3. Bring mixture to a boil and cook 5 minutes or until mixture is reduced by half.
  4. Add Thai chilies into the hot solution and remove from the heat.
  5. Allow to cool 15-30 minutes before placing into storage jars.
Canning
  1. Prepare the jars with tight fitting lids by first washing them (glass jars similar to canning jars are ideal).
  2. Steam clean jars and lids or place them in boiling water until ready to fill the jars with the pickled chilies.
  3. Wash hands and put on clean food handling gloves.
  4. Use a funnel to help fill the glass jars with the chilies (avoid getting any chilies or brine on the rim of the jar).
  5. Fill jar to within 1/2-3/4 inches from the top of the rim (you will need to work fairly quickly in order to keep the jar hot enough to help seal properly).
  6. Using a clean spoon, push down on the chilies to make sure they are packed into the jar (make sure you don't have any air pockets in the jar).
  7. When full, use gloves to screw on the hot lid.
  8. Set aside at room temperature to cool completely; refrigerate for the best quality.

  • Pickled Chilies can be eaten plain, as a garnish or drained to stir into baked goods. When pickling whole chilies, poke a few holes in the flesh so the brine can penetrate the whole chili. Substitute Thai Chilies for Fresno, Serrano or your favorite chili (just remember to wash the chilies well first). Use white or apple cider vinegar along with herbs or garlic for a unique flavor combination (if using garlic, add when cooking the brine).
