Batter
  1. Mix cornbread base according to package directions.
  2. Fold in corn, salt, cumin and garlic powder.
  3. Pour batter into a greased hotel pan and smooth with an offset spatula; bake as directed below.

Filling
  1. Add olive oil and lime juice to mashed potatoes; mix until well combined.
  2. Add remaining filling ingredients to mixing bowl; combine.
Assembly
  1. Spread meat filling evenly over cornbread base, the spread potatoes over top.
  2. Bake as directed below.
