Pecan Roll Coffee Cake

A sweet yeast bread is rolled around a crumbly filling of brown sugar, pecans and butter. Stunning and delicious!

Dough

Water, warm approx. 105-110°F

Filling
  1. Stir pecans, brown sugar and butter in mixing bowl until well-combined; set aside.
Dough
  1. Pour water and yeast in mixer bowl (with dough hook attachment); let stand 10 minutes.
  2. Add sweet roll mix the mix on low speed 1 minute; stop mixer, scrape bowl and hook.
  3. Mix on medium speed 3 minutes; stop mixer, scrape bowl and hook.
  4. Continue mixing an additional 4 minutes.
  5. Divide dough into 4 pieces (approx. 30 oz each); cover and let rest 15 minutes on floured bench.
Assembly
  1. Roll each piece of dough into 16x12-inch rectangle; spread 11.5 oz of filling evenly over top.
  2. Roll up long side of dough and seal all edges; place on parchment-lined sheet pan.
  3. Cover and proof until double, approx. 30-40 minutes then slit tops with diagonal cuts.
  4. Bake as directed below until golden brown and allow to cool before slicing.
