Peach Melba Torte

Thin cake layers sandwich a rich Bavarian cream filling with raspberries, and the cake is topped with another layer of cream and a stunning peach and raspberry design. Gorgeous!

Batter
  1. Prepare cake batter according to package directions.
  2. Deposit 1 lb cake batter into each of 8 well-greased 8-inch round cake pans.
  3. Bake as directed below and allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 12 minutes of baking.
Finishing
  1. Slice each cake in half horizontally; spread 12 oz Bavarian cream evenly over bottom layer.
  2. Place 4 oz of raspberries on top of Bavarian cream near edge of cake.
  3. Place 1 oz of raspberries in small circle in center of cake to support top; replace top layer.
  4. Spread 8 oz Bavarian Cream over top of cake; arrange 12 peach slices in a fanned-circle pattern.
  5. Add 1 oz raspberries in open spaces; brush fruit with 1 Tbsp warm apricot glaze and garnish with a mint sprig.
