Mussels in shells, scrubbed and debearded if necessary

Tea Broth
  1. Place tea bags and hot water in a gallon or greater-sized pitcher; steep for 15 minutes then discard tea bags.
  2. Add ginger paste, chili paste, sugar and salt to the steeped tea. Keep warm.
Assembly (made-to-order)
  1. Heat 2 Tbsp oil in a large sauté pan over medium heat; add 2 oz leeks and sauté 1-2 minutes or until tender, stirring occasionally.
  2. Increase heat to high and add 8 oz mussels; toss with leeks.
  3. Add 10 oz tea mixture; cover and cook approx. 2-3 minutes or until mussels open.
  4. Transfer mussels, using a slotted spoon, into a shallow bowl. Cover to keep warm.
  5. Add 2 Tbsp heavy cream and zest to hot tea mixture; stir to combine and bring to a simmer. Spoon over mussels and serve immediately.
