Masa corn flour

  1. Combine ginger, garlic, salt, pepper and butter in bowl; rub chicken pieces until covered and refrigerate for 15 minutes.
  2. Add egg, cheese, chilies, coriander, heavy cream, mace, nutmeg and corn flour to food processor; blend until smooth.
  3. Cover chicken pieces with sauce mixture and place on prepared sheet pan; cover and refrigerate for 3 hours.
  4. Bake and serve warm.

  • Tip: Add a few strands of Saffron to cream sauce for extra flavor or serve with pickled onions (1 cup finely sliced onions, 1/2 tsp salt, 1/4 tsp black pepper, 1/2 tsp red chili powder, juice of 1 lime) or coriander chutney (3 parts coriander, 1 part mint leaves; make paste and add salt, pepper and lime juice to taste) if desired.
