Mexican Wedding Cookies

A popular and irresistible bite-size tea cookie gets a head start with a white cake mix.

Dough
  1. Cut butter into 1-inch cubes and allow to soften slightly.
  2. Mix butter, cake mix, vanilla and walnuts in mixer bowl with paddle attachment on low speed 2 minutes until well blended.
  3. Deposit dough using #40 scoop in 4x5 pattern onto greased or parchment-lined full sheet pans (press scoop against the palm of hand when filling to flatten so cookies do not roll).
  4. Bake as directed below and allow cookies to cool at least 20 minutes.

*Rotate pans baked in convection oven one-half turn (180°) after 4 minutes of baking.
Finishing
  1. Mix powdered sugar and cornstarch in mixing bowl until well blended.
  2. Finish by rolling cookies in powdered sugar mixture.
