Kalamata olives, pitted, whole

  1. Whisk egg yolks, melted butter, and milk in large bowl until combined well.
  2. Add pancake mix to egg mixture and whisk until combined.
  3. Pulse feta cheese and kalamata olives in processer until it becomes a paste, approx. 10 seconds.
  4. Add feta cheese and kalamata olives to pancake batter.
  5. Add egg whites to mixing bowl and whisk on high speed until stiff peaks form, approx. 4-5 minutes.
  6. Fold egg whites into pancake batter. Deposit batter using a #40 scoop into each small heavily greased mini muffin tin.
  7. Top muffin tin with one greased sheet of parchment paper.
  8. Cover muffin tin with sheet pan to prevent parchment paper from blowing away in oven.
  9. Bake as directed below or until golden brown.
