Lemony Gingerbread Mini Mousse Cakes

Lemon and gingerbread are the perfect partners. Combine them in cupcakes topped with a dreamy cream cheese lemon mousse.

Lemon Flavored Gelatin
  1. Stir hot water and gelatin together until completely dissolved.
  2. Refrigerate 1 hour or until slightly thickened.
Lemon Mousse
  1. Mix cream cheese in mixer bowl with paddle attachment on medium speed 2 minutes.
  2. Gradually add prepared lemon flavored gelatin on low speed 1 minute or until well combined.
  3. Fold in whipped topping with rubber spatula; refrigerate at least 2 hours to set.
Batter
  1. Prepare cake mix according to package directions, adding spices and molasses in step 1.
  2. Deposit using #20 scoop into paper-lined jumbo muffin pans.
  3. Bake as directed below and allow to cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 7 minutes of baking.
Finishing
  1. Deposit mousse into pastry bag fitted with star tip.
  2. Pipe approx. 1.75 oz onto each cupcake and sprinkle with approx. 1/2 tsp lemon zest on top.
