Konbini Sandwich (Fruit and Yogurt Spread Sandwich)

A Konbini is the Japanese version of a Convenience Store. Sandwiches of all kinds are sold as snacks there, even a fruit sandwich.

Yogurt Spread

French bread roll

Strawberries, fresh, sliced

Kiwi, peeled, sliced into quarters

Yogurt Spread
  1. Combine yogurt, cream cheese, lemon extract and food coloring in a food processor; mix until smooth.
  2. Fold in lemon zest and refrigerate until chilled.
Assembly
  1. Open thawed French bread roll and add 2, #40 scoops of Yogurt Spread; spread evenly.
  2. Place a row of strawberry slices (approx. 1/8 cup) on the lower side of the bread; press in gently.
  3. Place a row of kiwi pieces (approx. 1/8 cup) on the upper side of the bread, press in gently
  4. Sprinkle 1 Tbsp mango and 1 Tbsp blueberries into center.
  5. Wrap, if desired, in food-grade sandwich tissue paper and twist ends to secure; refrigerate until chilled.

  • Prepare bread with Yogurt Spread in advance, then fill with fruit immediately before service.
