Katsu Pork on Corn Patties

Shredded pork takes on Japanese Katsu flavors -- hot and tangy -- and is stacked on individual corn muffin patties for a stunning presentation.

Corn Patties
  1. Pour total amount of water into large mixing bowl; add total amount of mix, oregano and eggs.
  2. Mix using a whisk until batter is very smooth.
  3. Deposit batter using a #40 scoop onto a parchment-lined sheet pan in a 4 x 6 pattern.
  4. Bake as directed below and allow to cool completely.

*Rotate pans baked in convection oven one-half turn (180°F) after 4 minutes of baking.
Katsu Pork
  1. Add Katsu sauce ingredients to a large mixing bowl and whisk until combined (heat-level will increase as it stands).
  2. Add pork and toss until meat is evenly coated in sauce; refrigerate until needed.
Assembly
  1. Place corn patty, dome side down, onto serving plate; top with a #40 scoop of Katsu Pork.
  2. Place 1/4 tsp cilantro on top and serve immediately.

  • Tip: Squeeze fresh lime juice over the top of the pork for a cooling, citrus note.
