Irish Chocolate Truffle Bread Pudding

This rich, custardy bread pudding is made with flaky croissants, bittersweet chocolate and Irish cream liqueur.

Heavy cream

Prep
  1. Bake croissants as indicated on package; allow to cool for 1 hour.
  2. Cut into approx. 1/2-3/4-inch cubes; set aside.
Assembly
  1. Add cream and milk to a small saucepan; bring to a simmer then pour over chopped chocolate.
  2. Allow to stand 3 minutes and whisk until smooth.
  3. Whisk together sugar, egg, egg yolks and vanilla in a separate bowl; slowly pour in hot chocolate cream mixture, whisking constantly so eggs do not curdle.
  4. Stir in Irish cream liqueur then croissant pieces; allow to rest at least 10 minutes or cover and refrigerate overnight.
  5. Spray ramekins and deposit a generous #6 scoop (5.75 oz) of mixture.
  6. Top each with 1 1/2 Tbsp dark chocolate chips and place in 2-inch half hotel pan.
  7. Pour boiling water into pan so it is 1-inch deep, being careful not to spill into ramekins.
  8. Carefully place in oven and bake as directed until knife comes out clean; serve warm or cold.

  • Use leftover croissants for this recipe to minimize waste. Substitute frozen raspberries or chopped cherries for chocolate chips if desired. Garnish with whipped cream a drizzle of caramel sauce or fresh berries if desired. Note nutrition information will change.
