Individual Biscuit-Topped Leek and Asparagus Egg Bakes

Leek and asparagus egg bakes are topped with biscuit pieces and Gruyere cheese for extra yum!

Heavy cream

3/4 cup

Black pepper
1/2 tsp
Gruyere cheese

Prep
  1. Thaw biscuit dough, covered, either at room temperature 15-30 minutes until flexible or refrigerated overnight.
  2. Cut each biscuit into 4 pieces, set aside.
Filling
  1. Heat large skillet over medium heat; melt butter then add leeks.
  2. Cook to sweat 3-5 minutes or until softened.
  3. Add asparagus and cook 4-6 minutes, stirring often, until tender; remove from heat.
Assembly
  1. Whisk together eggs, cream, salt and pepper in a mixing bowl.
  2. Pour 2 oz egg mixture into 12 ramekins (6-8 oz each); add 3 Tbsp (#20 scoop) Filling mixture.
  3. Place 3 biscuit pieces on top then finish with 1 Tbsp Gruyere cheese.
  4. Bake as directed until eggs are set and biscuit pieces are cooked through.

*Rotate pans baked in convection oven one-half turn (180°) after 6 minutes of baking.

  • Try baking in mini cast iron pots for a different presentation and similar bake times. Make it a meal and serve with a dandelion salad tossed in a lemon vinaigrette.
