Holiday Eggnog Cake

Nutmeg and rum add festive flavors to a holiday eggnog bundt cake that gets a start with a yellow cake mix.

Green food coloring

Batter
  1. Pour half of the water and the extract into mixer bowl; add cake mix and nutmeg.
  2. Mix using paddle attachment on medium speed 2 minutes.
  3. Add remaining water gradually while mixing on low speed.
  4. Stop mixer, scrape bowl and paddle; mix on low speed an additional 2 minutes. DO NOT OVERMIX.
  5. Deposit 2 lb 14 oz batter into 3 greased and floured 10-inch Bundt cake pans.
  6. Bake as directed below and allow to cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after minutes of baking.
Glaze
  1. Place icing in small saucepan and heat on low until glaze is free flowing.
  2. Drizzle randomly over cake, allowing glaze to flow down sides.
Decorator Icing
  1. Combine icing and powdered sugar; mix until smooth.
  2. Mix in food coloring until desired shade is obtained then place in pastry bag with leaf tip.
  3. Pipe 3 leaves on each serving and add red hot candies near leaves as holly berries.
  4. Allow glaze and icing to set before portioning.
