Green Peas and Asparagus Toast

Mashed green peas and asparagus with ricotta, radishes, pistachios, dill, and fresh lemon on a toasted pie crust will be a fresh breakfast or brunch option.

Toast Rounds
  1. Thaw pie dough rounds, covered, at room temperature 15-30 minutes until flexible or refrigerated overnight.
  2. Remove paper and place on parchment-lined sheet pans with glazed side up; bake as directed below and hold warm.

*Rotate pans baked in convection oven one-half turn (180°) after 7 minutes of baking.
Pea and Asparagus Spread
  1. Boil asparagus in large pot filled with lightly salted water; after 2 minutes add peas.
  2. Drain and toss quickly into ice bath; drain off ice water.
  3. Add melted butter and puree with stick blender; season with salt and pepper then set aside.
Assembly
  1. Deposit and spread #16 scoop (2 oz) of Pea and Asparagus Spread onto warm Toast Round.
  2. Layer on and spread #16 scoop (2 oz) of ricotta cheese, 1 Tbsp cooked peas, 9 asparagus tips, 5 asparagus shavings, 7 radish slices and 5 halved lemon slices.
  3. Garnish with 5 crushed pistachios and 1 tsp dill fronds.
