Garlicky Lobster Biscuit Fries

Inspired by the classic French dish made with French Fries, these fried biscuits are a delicious twist that perfectly complement the garlicy, buttery lobster tail.

Garlic aioli sauce, prepared

Lobster
  1. Split lobster tails in half lengthwise, leaving the meat in the shell; place pieces on parchment-lined sheet pan.
  2. Season each tail half with 1 Tbsp melted butter, 1 Tbsp parsley, 1 tsp garlic and 1/4 tsp salt.
  3. Bake as directed until lobster meat is cooked through and no longer translucent; reserve butter from pan.

*Rotate pan baked in convection oven one-half turn (180°) after 3 minutes of baking.
Biscuit Fries
  1. Place frozen biscuit puck vertically and carefully cut into 4, thin slices approx. 1/4-inch thick.
  2. Stack slices, then cut into 4 lengthwise strips, creating 16 fries.
  3. Preheat oil to 350°F and deep fry approx. 3-5 minutes until golden brown and crispy on the outside; drain.
Assembly
  1. Place 1 Lobster piece (1/2 of tail) onto serving plate and add 16 Biscuit Fries.
  2. Drizzle with small amount of reserved butter from baking sheet.
  3. Serve with 2 Tbsp prepared garlic aioli sauce for dipping.
