Crème Brulee Bread Pudding

The standard Crème Brulee flavors of vanilla, caramelized sugar and custard are combined with toasted bread cubes, berries and pecans for this Bread Pudding mash-up.

Prep
  1. Remove crusts from bread and slice into 8, rectangular pieces.
  2. Toast on parchment-lined sheet pan as directed below; allow to cool until needed.

*Rotate pans baked in convection oven one-half turn (180°) after 4 minutes of baking.
Bread Base
  1. Place cooled bread pieces into medium mixing bowl; drizzle on melted butter.
  2. Sprinkle with cinnamon and nutmeg; mix gently until combined.
  3. Add 12 bread pieces to 6 oz ramekins or 5 oz crème brulee dishes (greased or sprayed) and place onto a half size sheet pan; set aside.
Assembly
  1. Add milk, cream, eggs, sugar and vanilla extract to medium mixing bowl; whisk together until combined.
  2. Pour 1/3 cup of mixture into each baking dish then add 4 blackberries, 7 blueberries and 5 pecan pieces.
  3. Sprinkle 1 tsp of brown sugar evenly over the top.
  4. Place pan with filled dishes into oven then carefully pour hot water until the pan is half full.
  5. Bake as directed below until set; CAREFULLY remove pan from oven to avoid spilling hot water and serve warm.

  • Make ahead if desired and allow baked bread pudding to cool, then reheat for service.
