Cornbread Waffles with Roasted Strawberry Cream Cheese

Sweet, crispy cornbread biscuit waffles are a great pairing for the jam-flavor of roasted strawberries and cream cheese topping.

Prep
  1. Thaw dough, covered, either at room temperature 15-30 minutes until flexible or refrigerated overnight.
Roasted Strawberries
  1. Add strawberries and sugar in a large mixing bowl; stir together until coated.
  2. Allow to rest 15 minutes to start juicing; transfer to sprayed, foil-lined half sheet pan.
  3. Bake as directed stirring 1-2 times with spatula until softened and juices are thick and bubbly; remove from oven and allow to rest 5 minutes.

*Rotate pans baked in convection oven one-half turn (180°) after 8 minutes of baking and stir berries to minimize overbrowning.
Strawberry Cream Cheese Topping
  1. Add softened cream cheese and 1/3 cup (4 oz) warm, Roasted Strawberries (reserving remainder) to a mixing bowl.
  2. Fold together to swirl or mix to desired texture; cool completely before Assembly.
Assembly
  1. Place 1 thawed biscuit dough puck onto each section of well-oiled waffle iron, preheated to 375°F; bake 2-3 minutes or until golden brown.
  2. Place 1 waffle piece on serving plate and top with #40 scoop of Strawberry Cream Cheese Topping and #20 scoop reserved Roasted Strawberries; serve immediately.

  • For a smoother cream cheese topping, use a food processor if desired. Overcooking strawberries will reduce the yield and overbrown the fruit.
