Chocolate Peanut Butter Ganache Torte

Devil's food and yellow cakes stack four layers tall with an unbelievably rich peanut butter ganache between layers.

Peanut Butter Ganache

Batter
  1. Prepare both cake batters according to package directions.
  2. Divide each cake batter into 2 parchment-lined full sheet pans each (4 lb 4 oz of batter in each of 4 pans).
  3. Bake as directed below and allow to cool; freeze to improve handling.

*Rotate pans baked in convection oven one-half turn (180°) after 6 minutes of baking.
Peanut Butter Ganache
  1. Heat heavy cream to boiling in medium saucepan. Remove from heat.
  2. Add hot cream to chocolate chips. Let stand 3 minutes. Stir briskly until smooth.
  3. Add peanut butter to warm ganache and stir until smooth.
  4. Set ganache over an ice bath and stir constantly until cool.
Assembly
  1. Place a yellow cake layer into bottom of full sheet pan lined with parchment paper and a 3-inch pan extender or cake frame.
  2. Deposit 2 lb 4 oz peanut butter ganache on yellow cake layer. Spread evenly.
  3. Place devil's food cake layer on top of ganache, firmly pressing cake into pan extender until it is even.
  4. Deposit 2 lb 4 oz of peanut butter ganache onto devil's food cake layer, and spread evenly.
  5. Repeat steps 1-4. Sprinkle chopped peanuts evenly over top of ganache of the finished torte.
  6. Allow to chill 30 minutes. Place chilled torte onto full sheet cake board, remove pan extender and trim edges.
