Batter
  1. Prepare cake version of brownie batter according to package directions.
  2. Stop mixer, scrape bowl and paddle. Mix 1 minute longer.
  3. Deposit batter in greased mini muffin pan using #40 scoop.
  4. Bake as directed below.

*Rotate pans baked in convection oven one-half turn (180°) after 4 minutes of baking.
White Chocolate Mousse
  1. Melt white chocolate chips in top of double boiler on low heat, stirring frequently. Remove from heat.
  2. Whisk cream in mixing bowl fitted with whisk attachment on high speed until medium peaks form, approx. 2-3 minutes.
  3. Fold whipped cream rapidly into melted chocolate, and mix until fully incorporated.
Assembly
  1. Place chocolate chips into food processor, and pulse until finely chopped.
  2. Remove brownies from mini muffin pans.
  3. Deposit White Chocolate Mousse using #40 scoop on brownies.
  4. Press tops of cloud cakes into chocolate chips and serve.

  • Tip For a faster method, place white chocolate mousse into pastry bag with straight tip, and pipe approx. 0.7 oz onto each cake.
