Chicken Adobo

Chicken thighs are browned, then simmered in an Asian adobo sauce with onions, garlic and fish sauce until the chicken is tender and infused with flavor.

Yellow onions, minced

Garlic, fresh, minced

Water, cool approx. 72°F

Fish sauce

Bay leaves, dried

Marinade
  1. Combine vinegar, soy sauce and garlic in large bowl; add chicken.
  2. Toss marinade for 1-2 hours, turning chicken periodically to ensure they are evenly coated with marinade.
Adobo
  1. Remove chicken from marinade and reserve liquid.
  2. Heat oil in large pan over high heat; add chicken and brown on both sides (cook in batches if necessary).
  3. Remove chicken from pan and pour off all but 2 Tbsp of rendered fat.
  4. Reduce heat to medium; add onion and garlic to pan, sauté until onions are translucent.
  5. Add water, fish sauce, black pepper and bay leaves; bring to boil.
  6. Boil until sauce is reduced by 25% then reduce heat to medium.
  7. Add reserved marinade and chicken back to pan placing skin side up in a single layer; reduce heat and simmer for 20-30 minutes or until chicken is cooked through and tender.
  8. Transfer chicken to large bowl. Add brown sugar to pan of sauce; stir to dissolve.
  9. Cook over medium heat, stirring occasionally for approx. 3-5 minutes (if there is a lot of excess fat in sauce, skim fat off top with spoon and discard).
  10. Remove and discard bay leaves and pour sauce over warm chicken; toss until evenly coated and serve immediately.
