Water, cool approx. 72°F

Caramelized Onions
  1. Heat oil in large skillet over medium heat. Add onions and stir to coat in oil.
  2. Cook slowly, stirring occasionally, approx. 10 minutes.
  3. Add brown sugar and vinegar; cook slowly about 20 minutes or until caramelized. Allow to cool.
Goat Cheese Filling
  1. Mix goat cheese, eggs, heavy cream and basil in mixer bowl with paddle attachment on low speed until combined, approx. 1 minute.
  2. Stop mixer, scrape bowl and paddle; mix additional 1 minute or until well blended.
  3. Add filling to piping bag and refrigerate until ready to use.
Dough
  1. Mix water and biscuit mix in mixer bowl with paddle attachment on low speed until combined, approx. 1-1 1/2 minutes.
Egg Wash
  1. Beat egg and water in small mixing bowl with whisk until blended. Set aside.
Assembly
  1. Divide dough into 2 oz portions; flatten on floured work surface to 5-inch disks.
  2. Brush edges of dough with egg wash.
  3. Pipe 1 oz goat cheese filling into center of dough; place 1/2 oz caramelized onions on top of cheese.
  4. Fold edges of dough in toward center, overlapping edges as you create a pocket, leaving most of filling in center exposed.
  5. Brush folded edges of each tart with egg wash.
  6. Bake as directed below.
