Mascarpone Cream

Dough
Heat water and butter to rolling boil in a sauce pan.
Whisk in cake mix and flour until combined; reduce heat to low.
Stir vigorously over low heat about 1 minute or until mixture forms a ball; remove from heat.
Cool slightly, about 5 minutes.
Transfer mixture to bowl of a mixer fitted with a paddle attachment. Add eggs, 2-3 at a time, mixing after each addition.
Scoop dough using a #30 scoop (or pipe using a #808 round pastry tip), approx. 2-inches apart onto a parchment-lined full sheet pan.
Bake as directed below, turning temperature down after 10 minutes then baking until puffed and golden.

*After 10 minutes of baking, turn temperature down 25°F and rotate pan; continue baking.
Mascarpone Cream
Add cream to bowl of a mixer fitted with a whisk attachment; beat on high for 2 minutes or until thick.
Add sugar; beat on high for 1 minute or until soft peaks form.
Add mascarpone; beat until thick and smooth.
Break cooled puffs in half; pipe approx. 1.5 oz cream onto bottom half.
Top with remaining half and serve.
Tips: Dip in melted icing, dust with powdered or coarse sugar or garnish with finely chopped dark chocolate, if desired. You could also make cakepuffs ahead and frozen.
