Brownie Macaroon Cupcakes

A surprise awaits in the first bite of a decadent brownie cupcake: a hidden coconut macaroon in the center.

Macaroon Filling

Filling
  1. Add 8 oz of water and cake mix to grease-free mixer bowl fitted with whisk attachment.
  2. Mix on low speed for 1 minute, then on medium speed for 2 minutes.
  3. Add coconut and mix on low speed until it is just incorporated into batter.
Batter
  1. Add 6 cups water and brownie mix into mixer bowl fitted with paddle attachment; mix on low speed for 30 seconds.
  2. Mix an additional 60-90 seconds until combined.
Assembly
  1. Deposit #30 scoop Batter into greased or paper-lined muffin pans.
  2. Deposit #70 scoop Filling on top, followed by another #30 scoop of Batter.
  3. Smooth to cover all of macaroon filling and bake as directed below; allow to cool completely.

Finishing
  1. Heat chocolate icing to melt and dip in tops of cooled cupcakes.
