Blue Cheese and Pecan Shortbread Cookies

It's not just for dessert! Savory shortbread with blue cheese works on an appetizer plate with preserves, sweet or spicy.

Butter, unsalted, softened

Blue cheese, crumbled
1 lb 8.00 oz

Pecans, chopped

  1. Place pecans on sheet pan and toast in convection oven at 300°F for 4-5 minutes or until fragrant and dark.
  2. Cream blue cheese in food processor for approx. 20 seconds or until a paste forms.
  3. Add butter and muffin mix to mixer bowl. Mix on low speed with paddle attachment for 2 minutes.
  4. Stop mixer, scrape bowl and paddle. Add remaining ingredients to mixer bowl and mix on low speed for an additional 2 minutes.
  5. Deposit dough on a parchment-lined sheet pan using a #70 scoop in a 6 x 8 pattern.
  6. Place a piece of parchment paper on top of cookies. Place a second sheet pan on top of the parchment paper and press down firmly and evenly to flatten the cookies to approximately 1/4-inch thickness.
  7. Remove the second sheet pan and parchment once the cookies are flattened.
  8. Bake as directed below; cool completely and store in airtight container.
