Biscuits and Mushroom "Sausage" Gravy

A plant-forward twist on your favorite breakfast classic, substituting mushrooms for sausage with all the traditional flavors.

Smoked paprika

Gravy

Mushroom "Sausage"
  1. Add mushrooms and olive oil to pre-heated large skillet; stir as needed and cook until mushrooms start to sweat and squeak.
  2. Sprinkle with salt and pepper and continue to cook until the mushrooms start to crisp.
  3. Stir in brown sugar, thyme, sage, fennel seed, red pepper flakes, garlic powder and paprika.
  4. Reduce heat and cook 1-2 minutes to incorporate spices; set aside or refrigerate until needed.
Gravy
  1. Whisk together 3 cups water and gravy mix in bowl until lumps are dissolved.
  2. Add remaining 5 1/2 cups water to heavy saucepan; heat to boiling.
  3. Whisk in dissolved gravy until well blended and sauce thickens, about 1 minute, then remove from heat.
  4. Stir in cooked mushrooms until combined; keep warm.
Service
  1. Per portion, place one baked biscuit on serving plate; ladle approx. 5.5 oz (#6 scoop) of gravy over top.
  2. Garnish with 1 tsp parsley and serve immediately.
