Beer Glazed Whole Grain Bread

Dark beer and molasses flavor a whole-wheat bread loaf that's glazed with brown butter and a bit of beer.

Dough
  1. Prepare muffin mix according to package directions, substituting beer for water and adding molasses.
  2. Scale 1 lb 10 oz of batter into each of 5 greased 9 x 4 1/2 x 2 3/4-inch loaf pans.
  3. Bake as directed below.

*Rotate pans baked in a convection oven one-half turn (180°) after 14 minutes of baking.
Glaze
  1. Heat butter in heavy saucepan over medium heat; stir or swirl constantly to keep butter from burning. Watch carefully as butter can burn quickly.
  2. Remove from heat when butter turns brown and has a nutty aroma, approx. 5 minutes.
  3. Add 1/4 cup beer and stir to combine.
  4. Allow glaze to cool, approx. 15 minutes.
  5. Stir in remaining 1/4 cup beer and apply glaze to loaves using a pastry brush; let set.
  6. Slice each loaf into 18 1/2-inch slices; serve.
