BBQ Dry Rub Pretzel Buns

You expect kosher salt on a pretzel, but these buns, sprinkled with sassy spices, add a whole new level of flavors.

Pretzel Buns

Baking Soda Bath

Dry Rub Topping
INGREDIENT

Kosher salt
1 1/2 tsp
Mustard seeds
2 tsp
Oregano leaves, dried
4 Tbsp
Chili powder
1 Tbsp
Paprika
1 Tbsp
Dough Prep
  1. Prepare dough as directed on package.
  2. Working on nonstick surface, divide dough equally into two pieces and place on greased surface.
  3. Cover with towel and let rest 15 minutes.
  4. Form dough into 4 oz balls; place back on greased surface.
Baking Soda Bath
  1. Add baking soda and water to bowl; whisk until baking soda is fully dissolved.
  2. Deposit each dough ball into baking soda bath for approx. 5 seconds or until dough balls are completely covered in solution.
  3. Place onto parchment-lined and greased full sheet pan.
Finishing
  1. Cut X onto top of each dough ball using scissors (each cut should be approx. 1-inch long).
  2. Proof dough, covered, at room temperature approx. 45 minutes or until doubled in size.
  3. Mix dry rub ingredients together; sprinkle heaping 1/2 tsp on top of each dough ball.
  4. Bake as directed below or until deep golden brown.
