Artichoke, Spinach and Lemon Savory Bread Pudding

This savory bread pudding combines the artichokes, spinach and bell peppers with a lemon custard for fresh and unique flavors.

Prep
  1. Add diced, baked biscuits to a large mixing bowl with artichokes, spinach, red peppers, shallots and garlic.
  2. Stir gently or toss until well-combined; transfer to greased 2-inch, 1/2 hotel pan and set aside.
Assembly
  1. Whisk together cream, eggs, Parmesan cheese, lemon juice, lemon zest, salt and pepper in large bowl until well-combined.
  2. Pour into hotel pan evenly over biscuit mixture, making sure all the biscuits are saturated.
  3. Bake as directed below until golden brown, pudding is set and the temperature in the middle reaches 165°F; serve warm.
