Cross a croissant with a fritter for the hottest pastry trend around, cut like a doughnut and topped with ganache or a liqueur glaze.

Dough
  1. Place butter between sheets of parchment paper; roll or pat into 12x12-inch square; set aside.
  2. Dissolve water and yeast in mixing bowl (fitted with dough hook attachment); add roll mix, flour and eggs.
  3. Mix on low speed 30-60 seconds; stop mixer, scrape sides and hook.
  4. Mix on medium speed 4 minutes or until dough pulls away from sides of bowl; allow to rest 10 minutes.
  5. Roll dough on floured bench into approx. 20x20-inch square, 1/2-inch thick and place butter in center.
  6. Fold dough corners into the center and pinch edges to seal.
  7. Brush off excess flour, cover and refrigerate 30 minutes.
Roll
  1. Re-roll dough into approx. 16x24-inch rectangle, 1/2-inch thick.
  2. Fold 1/3 of dough (approx. 8x16-inch piece) over the center third; fold final 1/3 piece (approx. 8x16-inch) over the center third.
  3. Brush off excess flour , cover and refrigerate 30 minutes.
  4. Repeat re-rolling, folding and resting process 2 additional times.
Proof
  1. Roll dough a final time, into a 16x24-inch rectangle, 1/2-inch thick.
  2. Cut with doughnut cutter into squares or circles.
  3. Place rolls in proof box (set at 85-90°F with relative humidity of 70-85%) for 30-45 minutes or until almost doubled in size.
Fry
  1. Heat fryer to 350°F then fry donuts in batches approx. 1 minute per side until golden brown.
Glaze
  1. Whisk together powdered sugar, heavy cream and amaretto in large mixing bowl until combined.
  2. Cover and refrigerate until needed.
Ganache
  1. Heat cream and butter in medium saucepan to boiling, stirring constantly.
  2. Place chocolate in medium mixing bowl; pour in hot liquid.
  3. Allow mixture to stand 5 minutes, then stir until smooth.
Finishing
  1. Coat topside of donuts in Glaze or Ganache and serve.

  • If a proof box is not available, keep covered in a warm place that is away from drafts. Garnish with your favorite toppings such as coarse sugar, nonpareils, or chopped nuts as desired.
