Sweet Potato Raisin Whole Grain-Rich Muffins

Plump, sweet raisins are the perfect addition to a streusel-topped sweet potato muffin.

Ginger, dried, ground

Nutmeg, ground

Cloves, ground

Raisins

Topping
  1. Combine oats, brown sugar, sweet potatoes and cinnamon in mixing bowl.
  2. Set aside until needed.
Batter
  1. Combine water and sweet potatoes in large mixing bowl.
  2. Add muffin mix and spices; stir until batter is smooth.
  3. Fold in raisins and deposit #16 scoop of batter into greased or paper-lined muffin pans.
  4. Sprinkle with just under 1 Tbsp Topping and press lightly into batter.
  5. Bake as directed below and allow to cool slightly before serving.
