Sweet Potato Pear Cranberry Whole Grain-Rich Muffins

Hearty, moist muffins get a subtle sweetness from pears, cranberries and sweet potatoes.

  1. Combine water and sweet potatoes in large mixing bowl.
  2. Add muffin mix and cinnamon; stir until batter is smooth.
  3. Fold in pears and cranberries; deposit #16 scoop of batter into greased or paper-lined muffin pans.
  4. Top with 1/4 tsp raw sugar; bake as directed below and allow to cool completely.
