Peanut Butter Cookies

A whole-grain muffin mix gives a head start to mouthwatering peanut butter cookies rolled in coarse sugar and pressed with the traditional criss-cross pattern.

  1. Stir water, peanut butter and eggs in mixing bowl with whisk until well blended.
  2. Add muffin mix; mix until well blended. Do not overmix.
  3. Roll #24 scoop portions of dough in coarse sugar until coated.
  4. Place in 4x6 pattern on greased or parchment-lined full sheet pans.
  5. Press cookie with tines of fork to create crisscross pattern and bake as directed below.
