Peach Fritter Croissants

Prep
  1. Thaw croissant dough in a single layer on a parchment-lined sheet pan, covered either at room temp. 30-60 minutes until flexible or refrigerated overnight.
  2. Cut each croissant into 4 equal pieces.
Assembly
  1. Combine sugar and cinnamon in a large bowl; add croissant pieces and toss to coat.
  2. Blot drained peaches with paper towels to remove excess moisture.
  3. Place 4, sugar-coated croissant pieces in tulip liners (2 x 3 1/3-inch) in a standard muffin tin.
  4. Add 1 oz peaches then 4 additional croissant pieces.
  5. Bake until golden brown; allow to cool in pan 5 minutes, then remove and cool completely.
  6. Remove paper liners from fritters and place on a wire rack.

*Rotate pans baked in convection oven one-half turn (180°) after 11 minutes of baking.
Glaze
  1. Add powdered sugar, milk and vanilla to a mixing bowl; whisk until smooth.
  2. Carefully drizzle over top of the cooled fritters; allow to set before serving.

  • When in season, swap fresh peaches for the canned peaches.
