Pastry cream, prepared

  1. Bake frozen croissants on parchment-lined sheet pan until golden brown and dry to the touch; allow to cool completely, about 1 hour.

*Rotate pan baked in convection oven one-half turn (180°) after 8 minutes of baking.
Finishing
  1. Slice cooled croissants in half, lengthwise; pipe 2 oz of pastry cream onto bottom piece of croissant. 
  2. Melt icing in microwave-safe bowl, stirring every 20-30 seconds in microwave.
  3. Dip top piece of croissant into melted icing (about 0.5 oz per croissant); allow excess to drip off.
  4. Place chocolate topped croissant piece on top of pastry cream; allow icing to set prior to serving.
  5. Keep refrigerated for service.

  • Substitute pastry cream with prepared Bavarian cream or vanilla pudding for easier prep.
