Crust
  1. Add cake mix, melted butter, and eggs into mixer bowl fitted with paddle attachment.
  2. Mix on low speed for 1 minute, or until incorporated into a cookie dough-like texture.
  3. Divide dough into 3 equal portions (approx. 2 lb per dough ball); press firmly into 3 greased, parchment-lined, full-size hotel pans.
Filling
  1. Place cream cheese in a mixer bowl with a paddle attachment; mix on medium speed for 2 minutes.
  2. Stop mixer, scrape bowl and paddle; mix at low speed then add eggs one at a time, waiting until each egg is fully incorporated.
  3. Add vanilla and butter and mix until incorporated; stop mixer, scrape bowl and paddle.
  4. Mix on low speed for an additional minute then slowly add powdered sugar until incorporated. 
  5. Stop mixer, scrape bowl and paddle; mix on low speed for an additional minute.
Assembly
  1. Deposit approx. 2 lb 6 oz Filling onto each pan and spread evenly.
  2. Bake as directed until bars are golden brown and shiny on top.
  3. Allow to cool completely, then sprinkle with powdered sugar.

  • Serve with fresh berries or substitute the powdered sugar for a scoop of ice cream.
