Strawberry Shortcake Crumble Bars

Inspired by a beloved frozen dessert bar, these crumble bars will impress and delight!

Yellow Cake Crust

Yellow Cake Crust
  1. Add cake mix, softened butter, and water to a mixer bowl with a paddle attachment.
  2. Mix on medium speed 2-4 minutes or until crumbly; set aside.
Strawberry Crust
  1. Add cake mix, softened butter, strawberry gelatin powder, and water to a mixer bowl with a paddle attachment.
  2. Mix on medium speed 2-4 minutes or until crumbly; set aside.
Cream Cheese Filling
  1. Mix cream cheese and sugar in a mixer bowl with a paddle attachment on medium speed for 1 minute. 
  2. Stop mixer and scrape the bowl and paddle; mix for an additional 1 minute.
  3. Add eggs one at a time, waiting to add the next until each is incorporated, while mixing on medium speed.
  4. Stop mixer, scrape bowl and paddle; mix for an additional 1 minute.
  5. Swirl in 1 Tbsp gelatin powder.
Assembly
  1. Toss Yellow Cake Crust and Strawberry Crust lightly together in a large bowl to distribute evenly.
  2. Press 4 lb of mixture evenly into greased or parchment-lined full sheet pan; set remaining crust mixture aside. 
  3. Pour Cream Cheese Filling over the crust, then crumble the remaining crust mixture over top.
  4. Bake as directed, and allow to cool completely; keep refrigerated for service.
