Deceptively simple to prep and bake, this Hawaiian holiday staple delivers on creaminess and crunch.

Batter
  1. Add heavy cream, pumpkin puree, brown sugar, eggs, and cinnamon to a mixer bowl fitted with paddle attachment.
  2. Mix on low speed 2 minutes or until mixture is incorporated; stop mixer, scrape bowl and paddle then mix an additional 1 minute.
  3. Deposit about 4 lb 8 oz batter into each of 2, parchment-lined and greased full hotel pans.
Assembly
  1. Evenly sprinkle 1/4 box (1 lb 4 oz) of cake mix over top of Batter in each pan.  
  2. Sprinkle on walnuts, then remaining cake mix (1 lb 4 oz per pan). 
  3. Evenly spoon or drizzle half of the melted butter (about 1 lb 4 oz) on top of dry mix in each pan.  
  4. Bake as directed, until top is golden brown and slightly firm to the touch; cool then cover and refrigerate 3+ hours or overnight.

*Rotate pans baked in convection oven one-half turn (180°) after 32 minutes of baking.
Finishing
  1. Invert hotel pans onto parchment-lined sheet pans; frost pumpkin sides each with 4 cups icing.
  2. Allow icing to set before transferring to cutting board and slicing into 2x2-inch portions.

  • Swap in other nuts, chocolate chips or toffee bits for the crunchy layer.
