Cocktail cherries, liquid reserved, stems removed

Batter
  1. Pour half of cola, all the cake mix and cocktail cherries into bowl of mixer fitted with paddle attachment.
  2. Mix on medium speed for 2 minutes; stop mixer, scrape bowl and paddle.
  3. Pour in remaining cola and reserved cherry liquid gradually while mixing on low speed.
  4. Stop mixer, scrape bowl and paddle; mix for an additional 2 minutes.
  5. Deposit using #16 scoop of batter in paper-lined or greased standard muffin pans.
  6. Bake as directed, allow to cool in pan for 10 minutes; transfer to cooling rack to cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 10 minutes of baking.
Marshmallow Icing
  1. Whip vanilla crème icing and marshmallow fluff together in a mixer bowl with whisk attachment until smooth.
  2. Transfer to piping bag with a large star tip; pipe approx. 0.75 oz onto cooled cupcakes and serve. 

  • Root Beer and Dr. Pepper sodas are also recommended substitutes for Cherry Cola.

  • This recipe also works with flat soda.
