Toasted Pretzels
  1. Add crushed pretzels to a zip top bag with the canola oil.
  2. Seal the bag, leaving some air inside, and shake to thoroughly coat.
  3. Pour out and spread onto a parchment-lined half sheet pan; bake as directed, stirring halfway through the bake time.

Chocolate Cheesecake Filling
  1. Melt chocolate chips in double boiler on low heat until melted, stirring frequently.
  2. Remove from heat and allow to cool.
  3. Combine cream cheese and sugar in a mixer bowl fitted with a paddle attachment.
  4. Mix on medium speed for 2 minutes; stop mixer, scrape bowl and paddle.
  5. Turn mixer to medium then add heavy cream, lemon juice, vanilla extract, and salt until incorporated.
  6. Stop mixer, scrape bowl and paddle; mix on low speed for an additional 1 minute.
  7. Fold in melted chocolate until well-combined.
Assembly
  1. Invert thawed blondie sheet and remove parchment paper; place bottom side up on parchment-lined half sheet pan.
  2. Spread Chocolate Cheesecake Filling evenly over blondies.
  3. Sprinkle on Toasted Pretzels and cover with parchment paper; press gently into the cheesecake layer.
  4. Heat peanut butter in a microwave-safe bowl for 30 seconds stirring frequently until free-flowing; drizzle over top.
  5. Refrigerate 1-2 hours or overnight; separate from the cardboard baking tray and portion using a hot knife, then serve cold.

  • Blondies best enjoyed within 12 hours for best quality.
