In a lovely presentation, a delicious two-layer bar cake is iced with whipped topping, and fresh fruit is layered in a decorative design over the top.

Batter
  1. Prepare cake mix according to package directions.
  2. Deposit batter into greased and parchment-lined full sheet pan.
  3. Bake as directed below and allow to cool; cut into 12 - 4 x 8-inch sections.

*Rotate pans baked in convection oven one-half turn (180°) after 13 minutes of baking.
Finishing
  1. Frost each piece with 4.25 oz whipped topping.
  2. Use icing comb to finish sides of each section; pipe a border (using shell tube #22) of 1 oz around the top edge.
  3. Gently toss banana slices in lemon juice then arrange with blackberries, strawberry slices and kiwi slices as desired.
  4. Brush each section with 1 Tbsp warmed apricot glaze.
