  1. Place dough on parchment-lined full sheet pan; cover and thaw either at room temperature approx. 30 minutes until flexible or refrigerated overnight.
  2. Place a piece of parchment paper on top of croissant dough, then cover with another full sheet pan.
  3. Bake as directed until golden brown and dry to the touch; allow to cool for 5 minutes.

*Rotate pans baked in convection oven one-half turn (180°) after 7 minutes of baking.
Finishing
  1. Mix sugar and cinnamon in a medium bowl.
  2. Toss each warm croissant in cinnamon sugar; serve warm. 

  • Serve with your choice of dipping sauce.
