Prep
  1. Remove plastic from frozen blondie brownie sheet, run a knife along the inner edge of the cardboard liner to release.
  2. Remove cardboard packaging and invert blondie brownie onto a cutting board, blondie side down.
  3. Remove the parchment liner on the bottom; flip blondie brownie onto a half sheet pan lined with greased parchment paper, blondie side up. 
Cheesecake Filling
  1. Combine cream cheese, sugar, lemon juice, vanilla extract, and salt in the bowl of a mixer fitted with a paddle attachment.
  2. Mix at low speed to form a thick paste, then increase to medium speed until soft and smooth.
  3. Stop mixer and scrape bowl and paddle with a spatula.
  4. Switch to a whisk attachment and pour in heavy cream; mix at low speed to combine.
  5. Stop mixer and scrape bowl; increase to high speed and whisk until the mixture can hold stiff peaks, approx. 1-2 minutes.
Assembly
  1. Spread the Cheesecake Filling over the entire blondie brownie to fully cover, then drizzle with caramel sauce.
  2. Swirl caramel sauce through the Cheesecake Filling in a figure 8 pattern using a wooden dowel or toothpick to create swirls, then sprinkle with coarse Kosher salt.
  3. Refrigerate uncovered for 1-2 hours until filling is set.
  4. Portion into 3x2-inch pieces; serve cold.
