Cake-like pumpkin bars have a nutty crust and creamy vanilla icing.

Crust
  1. Mix all crust ingredients in mixer bowl with paddle attachment on low speed 2 minutes.
  2. Spread 3 lb crust into each of 2 lightly greased or parchment-lined full sheet pans.
  3. Press down evenly. Set aside.
Filling
  1. Mix pumpkin, eggs, spices and cake mix in mixer bowl using paddle attachment on medium speed 2 minutes.
  2. Add water gradually while mixing on low speed.
  3. Stop mixer, scrape bowl and paddle; mix on low speed 2 minutes.
  4. Deposit 4 lb 8.5 oz filling over each crust and bake as directed below; allow to cool completely.

Finishing
